I am going with my wife to Hong Kong next week. We are going to stay
there for two weeks. About 6 days in Hong Kong and the rest in South China
( I think Guangdong, Hainan, Guanxi). Is this a good idea to go to China
for 7-8 days ? What to see there ? Can we see anything in such a short
time ? Or maybe stay whole 2 weeks in Hong Kong ?

I wouldn't worry about spending too much time in Hong Kong- a few days to see the best of it, but like someone said before, it is a regular big city with rude people in it. I'd head straight to the train station and get on a train to Guangzhou and from there catch a night train to Guilin. When you get to Guilin take a mini bus to Yangshuo which is a really cool backpackers mecca where you can hire bikes, go into the hills hiking, climbing, good food, good weed and fantastic scenery. After that take a bus to the Dragon's Back rice fields where you will see amazing scenery and meet very nice people and stay basically in their homes. It is very cheap and very easy. You could also fly to Guilin from Shenzhen (or vice versa) which is more than 1/2 the price of flying from Hong Kong.
