I understand that "Visa Card accepted here" signs are abundant in most
cities in China, but that they really only accept Visa cards issued by
Chinese banks. However, in Hong Kong I understand that US issued Visa cards
are generally accepted everywhere. I would appreciate it if someone can
confirm or correct this information.

international visa cards are widely accepted in Hong Kong
(although many outlets there -- particularly including the most
interesting restaurants -- will only take cash). In PRC there are
plenty of places that accept international visa cards, but some will
only take visa cards issues by a Chinese bank.
