It's depend on how much time you have, but there is so much shopping its hard to narrow it down
There are the markets..Ladies Market, (Tung Choi St. in Mong Kok) All around this area are loads of street markets, just head to Mong KOk MTR stop and follow the signs. (All exits are marked) Oh, the Bird and Flower Market are also up around there. The Night Market is also in Kowloon on Temple Street in Jordan. The Jade Market isn't too far from the Night Market.
As for "normal shops" there are the Chinese Arts and Crtafts, one is located by the Star Ferry in Tsim Sha Tsui, Kowloon. Hollywood road on Hong KOng Island is good for browsing and looking at antiques. At the Western end, near Ladder Street are little lanes with curio shops. Also on Hollywood Road is a shop called G.O.D. (Goods of Desire) with some funky clothes and houseware stuff. (Its near the intersection of Hollywood Road and Lyndhurst Terrace.) Up around SOHO (South of Hollywood Road) by Staunton St and Elgin St. are some funky shops, cafes, bars and such. Giordano is the local equivalent of the GAP, and have a look in Shanghai Tang on Pedder St. in Central on Hong Kong Island. It's exspensive, but is fun to look around. (They serve tea in the back by the stairs between 1:00pm and 5pm.)
Arm yourself with a good map, and the Where Magazine, (get it either at the airport at the tourism kiosk, or at the Star Ferry Kowloon side tourist Info office.)
As for tailors, I use Raymond at Winston Tailors in Far East Mansion 1/f
Middle Road Kowloon. there has good selection of fabric and takes about a week for a suit. (most good tailors take about that long) it usually involves a couple of fittings and a final one when you pick up your suit.
