2 nights in Hong Kong

I am looking for suggestions on what I should see and do duiring a 2 night stay at the first of December. Will be arriving into HKG on a Sunday at 2:50 pm, and departing 2 nights later on a Tueaday at 1:10 pm. From my arrival to my departure, how do you recommend I use my time? I want to see and do as much as possible during my short stay.

What highlights of Hong Kong can I cover given my time frame. Can you help me with the logistics of when to see and do the various activities and attractions. Thanks for your help, I look forward to your response.

Taking into consideration HK's amazing transport I am suggesting down under, since you haven't mentioned where you are planning to stay....
1) Sunday - As you land, head straight to the Peak.Try reaching there by 4:30/5 pm so you can enjoy the day n night of HK.Have to pay extra for sky terrace.

Later you can even catch the "Symphony of lights" show from Avenue of Stars( kowloon ) at 8pm ( I don't remem if the show is in Eng on Sun, but it's just a commentary

OR take a night walk there enjoying the Harbour view.
2) Monday - You can either go shopping at Mongkok area and the famous ladies maket ( opens at 12 pm ) and end your day at Temples Street Night Market ( opens at 7 pm ).

If you are a gadget freak look no where beyond Mongkok. There's a Mongkok Comp Centre there and tons n tons of Electronic shops.
OR
I really suggest you go to Giant Buddha ( just Buddha, not the Monastry ) reach there by 9:30am ( bus takes 45 mins from a MTR stn called Tung Chung ). By the time you go, cable car must have restarted. Buddha entrance opens at 10 am. You will finish by 11:30/12 pm....and then in 1 1/2 hr you should be back in city.. Then go to Mongkok and ladies Market etc......

3) Tue - You can even shop Terminal 2 where there are only shops n shops....

Ocean Park ( it takes almost full day ...)
Disney ( full day )
Visit to Harbour City Mall is a must according to me.....
take the tram ride in HK island ( but in the eve to see the lights and the crowd)
