Hi.

We're a family travelling from HK to Guilin by train in a couple of days time.
Is it best to go via Shenzhen or Guanzhou?

Just go to whichever suits your timing better. Shenzhen is a little closer to Hong Kong.
Guangzhou -- Guilin: K36/K37 (1740--0651) or T38/T39 (1950--0642)
Shenzhen -- Guilin: T38/T39 (1728--0642)
