I'm wondering if anyone is aware of boats travelling between Hong Kong
and either Shanghai or Beijing? information please.

There's a variety of coastal and upriver services from Hong Kong, but
nothing that goes anything like as far as Shanghai, let alone Beijing.
Those services have long been suspended.
There's a very comfortable ferry from Hong Kong to Xiamen. See
but after that overland is your only option, except that you can ride
short section of the Grand Canal from Hangzhou to Suzhou overnight.
