When will you arrive in Hong Kong? (Just for reference: it was happened today that more than 100 people who bought the Disney tickets but are not allowed to enter whe they arrive as the visitors are exceeded already) so please check clearly that if you can still enter before going it.

If you stay in HK for one night only, I can suggest that the hotel should be near the airport and the Disney Land unless you want to spend some time in the downtown.
HK$2000 dollars can be stayed in 6-stars hotel for one night. I can help you book the hotel with much cheaper price, just tell me what rate of hotel you prefer.

There are some shops which sells Disney souviners but of course not all of the items are included in that kinds of shops but will be cheaper

I haven't personally been to HK Disneyland but my brother (who's a big disneyland fan) told me that HK disney paled in comparison and wasn't worth the admission ticket because only about 60% of the stuff was ready. Just thought I'd pass on the info so you can temper your expectations.

I've seen Disney stuff sold outside of the property. If nothing at all, the airport sells Disney stuff.
