Hotels and things to do on tour to Hong Kong

Hi All

My partner and I are travelling to New Zealand and on our way we'll have a 5 day / 4 night stay in Hong Kong, I'd really appreciate any information about the following:
A well located decent hotel for up to HKD1000 per night
Where's the best area to stay to get around easily by public transport to places of interest but at the time be in the middle of an area with good nightlife?
Is it feasible and worth doing a day trip to cross the "border" to China proper? If so what would be best to try and fit into the day?
A couple of recommend places to eat, preferably in a good location
Some suggestions about places to visit
We'll be arriving in the afternoon of Friday 20th May and leaving for Auckland evening of Tuesday 24th May. I know I've asked a lot of questions, problem is I've found so much info about what's recommended but can't do it all, altough we'd like to make the most of the short stay.

Any advice/information/links/recommendations will be greatly appreciated.

Acutally any hotel in Tsim Sha Tsui area is good and well located in the central heart of Kowloon. If you budget is adequate, I would recommend Holiday Inn at Tsim Sha Tsui, around 900 per night. 2 minutes walk to MTR station. 10 minutes walk to legendary Star Ferry....5 minutes walk to a huge shopping mall(Ocean City). 5 minutes walk to plenty of pub. If you take star ferry to HK Island and get to Lan Kwai Fong, you will be overwhelmed by all kinds of pubs.
Absolutely NO to ShenZhen!!! Robbery, Crime, Dirt all over the place and since you will be obvivously a non-local, you could soon become a target.
Eat? You should really try Chinese restaurants as you are in HK, but try Aqua in Peking Road - it is fashionable, good food and has the best view in HK.
places to visit:
1. The peak -> a must for first time HK visitor, especially the night view
2. Star Ferry
3. Stanley, enjoy the beach and hawker market
4. Temple street, go at night and you will enjoy a HK night Bazzar.
5. If you want to buy computer related equippment, Golden Center at Sham Shui Po. If you cannot find anything you wanted here, you cannot find it anywhere else in the world.
6. Shopping Mania - Tsim Sha Tsui, Causeway Bay
7. Absolutely High class shopping - Admiralty, The Landmark - Central
8. Sai Kung - Sea food market
9. Some island hoping?? Lamma Island - big budda, Cheung Chau, Ping Chau,
